Most commercial pancake mixes have chemical flavor enhancers and preservatives included in the ingredients. To keep the “easy-to-make” factor but eliminate the bad stuff, I recommend making your own pancake mix. An added bonus, it’s much less expensive than the storebought stuff.

I’m betting you have all the ingredients on hand. It’s quick and easy to whip up a batch of mix so you’re ready for a delicious pancake breakfast any time.

Make Your Own Homemade Pancake Mix

Materials

  • Large bowl
  • Whisk
  • Large zip storage bag or large jar with air-tight lid

Homemade Pancake Mix Ingredients
Makes 40 4-inch pancakes.

  • 4 cups all-purpose flour
  • 3 Tbsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 Tbsp sugar

Pancake Mix Ingredients

In a large bowl, thoroughly blend all Pancake Mix Ingredients with a whisk.

Store the ingredients in a large zip storage baggy or airtight container.

Stored Pancake Mix

For an even healthier pancake mix, substitute half of the flour with wheat flour.

Whip Up A Batch of Pancakes

Ingredients for a batch of 10 4-inch pancakes.

  • 1 cup Pancake Mix (above)
  • 1 egg
  • 1 cup milk
  • 1 Tbsp melted butter (or oil)

In a medium-size bowl, pour in Pancake Mix. Add egg, milk, and butter to the bowl.

My picky eater mentioned these taste “eggy” to her (as she gobbled down a whole plate of them). Try just the egg white if you don’t like the taste of egg.

Good To KnowGood to Know If you have an intolerance or allergy to egg, substitute egg with 1/4 cup applesauce, 1 bananana, or with an egg substitute.

Using a whisk or fork, thoroughly blend all ingredients.

Some people have mentioned their homemade pancake batter ends up “watery”. I noticed this too, at first. If your batter seems too liquid, wait a few minutes and it becomes surprisingly thick.

Pour batter onto a preheated pan or griddle on medium-low heat.

Cook until bubbles form throughout the pancake and have popped. Flip each pancake when it’s golden brown on the cooking side.

Cook 1-2 minutes on second side, until golden brown and cooked throughout.

Freeze Your Extra Pancakes

If you make pancakes and have extras, don’t throw them away! Pancakes freeze well and can be reheated for a hearty breakfast on even the busiest mornings.

To freeze pancakes, let them cool completely. Line a baking sheet with parchment paper, wax paper, or plastic food wrap. Put your pancakes on the lined baking sheet.

Put the baking sheet in your freezer for at least an hour, or until pancakes are fully frozen. When the pancakes are completely frozen, remove them from the baking sheet and put into a freezer-safe bag or container.

When you’re ready for a quick pancake meal, remove whatever quantity of pancakes you want and reheat them in a microwave, toaster oven, or your stove oven until warm.
